Leek and Ginger soup

1 person portion

1 small onion (diced)
1 clove garlic (finely chopped)
1/2 tsp ginger
1 small leek (thin sliced)
1 small carrot (thin sliced)
1/2 pt vegetable stock
dash oil

Gently fry the onions, ginger and garlic in the oil until onions soft
Add the carrots and vegetable stock and gently simmer until the carrots are soft.
Place all  in blender and serve

6 roma tomatoes
1 small red onion5-8 jalepeno chiliesjuice 2 limes
1 12oz. can peaches, drained

2  4oz. cans diced green chilis
