* 1 large aubergine cut into chunks
* 2 tbsp olive oil
* 250g punnet cherry tomatoes
* Red Pepper
* small bunch each mint and flat-leaf parsley leaves coarsely chopped
FOR THE DRESSING
* 1 tbsp olive oil
* 1 tbsp balsamic vinegar
* juice of ½ lemon (1 tbsp from a bottle)

1 person portion
1 small onion (diced)
1 clove garlic (finely chopped)
1/2 tsp ginger
1 small leek (thin sliced)
1 small carrot (thin sliced)
1/2 pt vegetable stock
dash oil
Gently fry the onions, ginger and garlic in the oil until onions soft
Add the carrots and vegetable stock and gently simmer until the carrots are soft.
Place all in blender and serve
Serve
